RECIPE

Navara Rice Kanji Recipe

Components:

  • Navara rice: Half a cup

  • Half a cup of green moong; five glasses of water

  • A quarter cup of small, smashed onions

  • One inch of ginger, thinly sliced

  • One teaspoon of black peppercorns

  • Half a teaspoon of turmeric powder; one teaspoon of desi ghee or cold-pressed oil; and salt to taste

  • Curry leaves: six to eight; asafoetida: a small amount

Steps to follow: 

  • Wash and soak the dal and rice for 30 minutes.

  • Combine with turmeric powder, black peppercorns, and a small amount of salt in a pressure cooker.

  • Include five cups of water and heat through.

  • Put the weight on top of the closed cover, cook for five to six whistles.

  • Allow the pressure to naturally subside.

  • Lift the cover to see if the rice and dal are soft enough to easily be digested.

  • Taste and add salt.

  • Heat some oil or ghee in a small pan.

  • Add curry leaves and asafoetida when hot.

  • Cook the ginger and crushed onions until they are tender.

  • Include this in the kanji for Navara rice.
